As the nation prepares for its 250th birthday, the District’s vibrant restaurant scene is doing what it does best: turning culinary fusion into a celebration of culture.
Through the end of June, the local initiative “Eat 250: America at the Table” is bringing together over 200 area restaurants for a two-pronged celebration of American history told through food. The program, designed to unite the community following the busy primary election season, highlights the international diversity that defines Washington, D.C.’s dining landscape.
“We have a lot of different cuisines throughout the region and I think this is the best way to tell our story,” said Sean Townsend, president of the Restaurant Association of Metropolitan Washington (RAMW), during a segment on NBC4.
A Marriage of Cultures
The highlight of the initiative features 11 exclusive collaboration dinners, where chefs from vastly different backgrounds team up to create unique, one-of-a-kind menus. One standout partnership features the fusion of Italian staple Stellina and Doro Soul Food, which puts an Ethiopian twist on traditional American Southern cuisine.
Antonio from Stellina noted that the partnership felt natural, as both cultures share deep-rooted traditions in coffee, fermentation, and spice. Chef Ellias of Doro Soul Food explained that the collaboration allows him to tell his own story as an Ethiopian-American chef, marrying dishes like fried chicken and mac and cheese with traditional Ethiopian spices like berbere.
How to Join the Celebration
The “Eat 250” promotion is currently underway and runs through June 28 . Residents looking to participate have two ways to get involved:
- Restaurant Specials: Over 200 restaurants across the region are offering special menu items in honor of the celebration.
